Thanksgiving dinner plan posted Nov 25th 2008, 8:13PM
Okay; can get complicated, so I'm gonna make it easier on myself by simplifying things a wee bit.
Instead of making the whole turkey (even though its a small one since there aren't going to be too many people over, just 6 plus the baby) and worrying about the breast being done before the dark meat (always a problem, white meat is done before the dark meat, resulting in the white meat being dry and overcooked before the dark meat is done), I'm only doing the breast so it stays nice and juicy. I'm gonna brine it all day tomorrow as well so it has a nice flavor; a simple brine with a hint of orange.
To continue the theme with the turkey, it will get an orange glaze with thyme and a bit of garlic (which becomes sweet if you cook it for long periods of time without burning it). We're also going to have a nice smokey ham, with a light orange glaze as well. I haven't decided how to go about the mashed potatoes yet, maybe normal, cheesy, or cheesy with bacon... not sure. Also going to make some bacon-wrapped baby asparagus and sauteed green beans for side dishes.
Sound about it, I guess.
As you can tell, I'm bored and have nothing better to do then write a journal since zOMG! keeps freezing up on me T-T
